BROCCOLI
CHEESE SCALLOPED POTATOES
INGREDIENTS
2
tbsp. margarine
1
small onion, sliced
1
can (10-3/4 oz) Campbell's condensed broccoli cheese soup
1/3
cup milk
1/8
tsp. pepper
4
medium potatoes, cooked and sliced (about 3-1/2 cups)
Small
pkg. of shredded cheddar cheese
Chopped
fresh parsley for garnish
DIRECTIONS
Boil
potatoes until tender when pricked with fork. Drain, refrigerate
until cool enough to slice.
In
10-inch skillet over medium heat, melt margarine and saute onion
until tender.
Add
remaining ingredients, except parsley.
Heat
to boiling. Reduce heat to low
Transfer
to baking dish, sprinkle top with shredded cheddar cheese, and bake
at 325 degrees, uncovered, for 20 minutes.
Garnish
with parsley before serving.
YIELDS 3 1/2 to 4 servings
