BUMPED-UP STUFFING FROM THE BOX
INGREDIENTS
4
tablespoons butter, divided
1
medium-large onion (1 cup), finely diced
4
celery stalks (1 cup), finely diced
1
teaspoon bottled minced garlic
1
box (6 ounces) Stove Top Stuffing Mix
2
cans (10-1/2 ounce) Chicken Broth
3/4
cup (3 ounces) chopped pecans
DIRECTIONS
In
a large, deep nonstick skillet, melt 2 tablespoons of butter over
medium-high heat.
Meanwhile,
finely dice the onion and celery, adding it to the skillet as you chop.
Cook,
stirring from time to time, until mixture is translucent and soft
(about 5 minutes)
Pour
the chicken broth into a large measuring cup and add just enough
water so the broth AND water equals the total amount of water called
for on the stuffing box directions. Pour the broth/water mixture into
the skillet.
Add
the seasoning packet and bring the mixture to a boil.
Stir
in the stuffing crumbs and reduce heat to low.
Cover
the skillet and cook for 6-8 minutes.
Meanwhile,
if you wish to add the pecans, put the nuts in a single layer on a
microwave-safe plate and microwave at high, uncovered, for 2 minutes,
or until the pecans begin to crisp and become fragrant. Remove and
set aside.
Uncover
the skillet and dot the remaining 2 tablespoons of butter over the stuffing.
Sprinkle
the pecans over the top of the stuffing.
Fluff
with fork, mixing well.
Serve
at once or remove from heat and let stand, covered, until ready to serve..
This will be a very moist stuffing and it's VERY GOOD!
