CREOLE FLOUNDER

        INGREDIENTS

        2 lbs. flounder fillets

        1 large tomato, seeded and chopped

        1 medium green pell pepper, chopped

        2 Tbsp. chopped fresh basil

        1 Tbsp. dried minced onion

        1 tsp. Creole seasoning

        1/3 cup fresh lemon juice

        1 Tbsp. olive oil

        1/4 tsp. hot sauce

        Garnish: lemon slices

        DIRECTIONS

        Cut fish into 6 pieces and place in lightly greased 13 x 9-inch pan.

        Stir together tomato and next 7 ingredients, and spoon over fish.

        Bake at 500 degrees for 7 to 10 minutes or until fish flakes easily with fork.

        Serve with fried potatoes or rice.
