SANDY'S POPPY SEED SALAD DRESSING
        (This originally came from a well-known Nashville restaurant 25 years ago)

        INGREDIENTS
        1 medium onion (cut up in small sections)
        2/3 cup white vinegar (divided into half)
        1 cup sugar
        2 tsp salt
        1 tsp. celery seed
        2 tsp dry mustard
        1 tsp. minced garlic
        2 cups olive oil
        1 Tbsp. poppy seed

         
        DIRECTIONS
        In blender, combine onion and 1/3 cup white vinegar and blend until smooth.

        Add sugar, salt, celery seed, dry mustard, minced garlic, and the remaining 1/3 cup of vinegar. Blend until smooth.

        Slowly add 2 cups of olive oil, while blending at high speed. Blend until thickened and creamy.

        Add poppy seed and blend until well mixed with creamy mixture.

        Keep refrigerated.

        YIELD: 36-40 ounces
